When I went to visit my daughter and her family, she had taken me to Mariano’s Grocery Store. While she was waiting for her deli order, I found the bakery. I saw this slice of carrot cake, and it looked delicious and well ya know it came home with me. Now the best carrot cake I have ever made was totally by scratch for my husband Randy, but I was like OMG this is real cheesecake uses as the filling and topping then covered in finely crushed walnuts.

So what you need are the following ingredients:


Duncan Hines Decadent Classic Carrot, Jell-O No Bake Real Cheesecake cooking spray, three Eggland Eggs One single serving Mott’s Granny Smith no sugar added applesauce, one small can of Dole Crushed Pineapple no sugar added.

Okay now we see the Ingredients need to use to bake this cake the direction on the box. NOT


Now as you see the things, you need to make this cake are oil, water 1-1/4 (bottle) three large eggs. Well, we are going to substitute so pay attention now this is!

Important!!! Open the cake mix pour into a mixing bowl; I use stainless steel bowls because they are easy to clean. I use Eggland Eggs Cage Free I just like a healthier egg. Okay so crack those eggs one by one into a small. Beat each with a fork and add to the bowl then the next egg and etc. The reason for this a lesson learned is no matter how fresh the eggs are there is the occasional rotten one so if you crack one egg in the bowl and then the next and its rotten, you have to throw everything out. So it’s easy to crack one at a time into a ramekins.

So then your eggs are in the mix and you a pouch in the box as well, this will be the shredded carrots and raisins with you need to soak in 1 cup of room temp water (bottled) now the recipe calls for: 1-1/4 cup of water. Well, this is where that can of crushed pineapple comes in. Now one can of crushed pineapple un-drained equals 1/4 of cup water. Plus you add another fruit to your carrot cake.

Now remove the cakes onto their own plate let cool completely about 1 hour after the cakes have cooled and settled.

Cooling Down

Now for step two, take a stainless steel mixing bowl using the “No Bake Cheesecake Mix” follow only the cheesecake mixture using fat-free milk or Almond Milk Vanilla/Coconut is best. Beat the mixture as directed on the box.. let set for about 20 minutes.


Spread one layer with cheesecake filling


Place the top layer onto of the bottom layer. Let settle for a minute as you want to make sure the filling and top layer will not slide.

Now Top layer is in Place



Okay so now we have one layer into a two layer cheesecake fillings and a bowl of cheesecake filling left so we well take out the spatula and slowly adding the filling on top of the cake

My Dad’s Breakfast aka Grandpa Eggs #breakfast #eggs #grandpaeggs

Ever since I can remember growing up my father every morning would have one boiled egg one slice of toast and his coffee black. Nothing ever changed. He would hard-boil an egg peel away the shell, mash the eggs in a rankin add just a little butter and salt & pepper. Now as far as I know this has been his daily breakfast since 1956. The year I was born.

In 1980 I gave birth to his first Grandchild and she was the APPLE in his eyes, He just loved her to pieces, So I would say about 8 months in to her growing life, Grandpa made his breakfast and Emma in her highchair, Grandpa gave her a bite of his eggs, and she just couldn’t get enough of them, so he made her a boiled egg every morning they would have “GRANDPA EGGS” now everyone in the family knew what she was asking for.  Well when Emma was 2 yrs old we moved back to California. I had taken on a job working from 5 pm to 9 am so she was with my landlord at the time who would watch her till her dad came for her and then she would go back in the morning till I got home, so she would have breakfast with the babysitter. When she was asked what she wanted for breakfast she said Grandpa eggs. The lady fixed her scrambled eggs, she tried fried, poaching them and nothing she did with the eggs was right. Emma wanted her Grandpa Eggs. So I get a phone call at work and the sitter is just so upset and I thought what happened is Emma ok and she was Spanish-speaking  and she is going on & on about these eggs. So finally I get what she is trying to tell me which was WHAT are Grandpa Eggs.

I explained to her you need to boil one egg to hard-boiled stage, and then mash it in a bowl and add a little butter, I had to remind myself on the way home to buy this lady a dozen eggs. LOL But all in all Emma got her Grandpa Eggs where I think she may have gotten the idea that my dad also broke up cheese because she adds cheese now, but my dad didn’t eat much dairy. I think the babysitter added cheese. Till this day Emma only calls them Grandpa Eggs.

Items to buy:

  • 6 Cups of sliced Golden or Gala Apples
  • 1 box of Instant Oatmeal (I used the Pumpkin Spice Seasonal)
  • Maple & Brown Sugar, Blueberry, Cinnabon, oatmeal with raisins, etc.
  • I use Land-o-lakes sweet cream  you need one cup melted
  • Honey your choice I like Sue Bee Hone
  • I use blue bunny frozen Yogurt Pralines

Take 8 X 8 square Pyrex dish and add a layer of apples, take one pouch of the instant oatmeal sprinkle over apples and repeat making sure the top is covered with oatmeal.

Add melted butter by pouring evenly over the apples and then drizzle honey over the top.

Heat oven to 350* Bake for 40-45 minutes. Now put in your stove oven or toaster oven for 40-45 minutes.

Out of the oven looking really yummy.

When it is done grab some bowls and when it is about medium warm put some ice cream on the top.

Kassee’s Banana Pineapple Smoothie #smoothie #recipe

Being widowed now for 7 yrs and I have had to learn to cook for one.

One thing I love to have every day is a cold yummy smoothie.

What to you need to buy:

One bunch of Bananas

One box of sandwich bags with the fold in flap.

One box of 1 quart freezer bags  (store brand is great)

One cutting board with slicing knife.

5 bananas in this bunch

Remove entire peel.


Now cut each banana in half. Next you want to take each banana and insert both halves in the sandwich bag and fold the flap over and repeat till all 5 bananas are in the sandwich bags.

Next take bananas and place in a one quart freezer bag

Once you have the bananas in the zip lock freezer bag place them in freezer. Once they are frozen just take what you need out for a banana smoothie. I just use one sandwich bag and then you have a lot left for your next smoothie.

Unwrap the banana and place in smoothie blender cup.

Now you can just add milk or some extra frozen fruit

I use almond/coconut either silk or almond breeze. Add a few chunks of frozen pineapple. I personally use a Ninja blender. Place on your blender hit BLEND!


After all is blended you will have a  healthy smoothie.

This is a Family recipe handed down from my grandmother Nana Lane. We call this recipe Salmon Pie. I will share the ingredients you will need for you next shopping adventure.

Ingredients you will need to make this tasty dish.

Salmon: I like the package by bumble bee, canned or fresh.

I prepare food for just me, so you make this for a family of lets say 6 you will need to adjust the recipe.

Back to me, being widowed now for 7 yrs this is a perfect recipe for 1-2 people.

Salmon, small baby Peas, potato mix I  use Idaho Red potato, butter and Ritz crackers. I use whole wheat kind.

Step one: Stove top boil the 2 cups of water.

Add the potato turn off burner, once the potato is fully mixed, add the peas folding them over gently, add salmon

Once you have everything mixed in (Don’t forget to share a little salmon with your cat).

Sophie says, “I Spy something smells fishy”

I use a pie dish so add the mixed ingredients.

Now you say what about the Ritz crackers?

I use half of a roll of the crackers place crackers in a sandwich baggie  and use a mallet breakdown the crackers to crumbs, Now add the crackers to the top spread over the mixture.

Add a few butter pats on top, turn your oven on to 350 bake for 30 minutes
